Low-Fat Chewy Peanutty Balls
1 1/2 cups regular oats (can use quick oats, but more mushy)
1 1/4 cups shredded wheat squares (cold cereal), break into small pieces
3 tbsp ground flax
1/2 cup whole wheat flour
2 tbsp peanut butter (creamy)
1/3 cup agave or honey
1/3 cup corn syrup (make sure it's not high fructose)
1 tsp vanilla extract
1/4 tsp Real salt
2 tbsp semi-sweet mini chips
In a medium bowl mix all the ingredients starting in order. Stir and mix well. Use a spoon to firm the ball and compact firmly with your hands and fingers, shaping into 2" balls. Place on wax paper or a greased cookie sheet.
