The drink can be purchased in most grocery stores, however it can be a little expensive, so I recommend making it yourself!  The process of making it is fun and easy to do!  All you need is a Kombucha Scoby, or mushroom start, (although it is not a mushroom, but a jellylike substance) or Symbiotic Colony of Bacteria Yeast, the good ones, not the bad bacteria and yeast!

 ​To make 14 cups of kombucha follow these instructions:
** You can substitute 1 tsp of loose tea for 1 tea bag

13 cups non-chlorinated water (see below for removing chlorine out of the water)
6 tea bags green tea (our favorite) or black tea (organic if possible)
1 cup sugar (we use organic)
1 Kombucha Scoby (included in starter kits, buy online here)
3/4 cup kombucha starter liquid (included in kits or use 1/4 cup distilled vinegar)

Boil 13 cups of water in a stainless steel pot. Boil for 10 minutes to remove the chlorine if your filter does not remove it.  Add the sugar and boil for 5 minutes.  Add the tea bags, place lid on and remove from heat. (*see instructions below if you wish to decaffeinate.)   Let the tea steep 15 minutes and cool to room temperature.  (I stick my pot outside when it's cold to make the process faster, making sure the lid is on.)  (Metal, even rings on hands should NEVER touch the scoby culture or starter liquid so be aware of that.) Remove the tea bags or strain the tea.  Poor your starter tea into a glass jar.  If the tea is too warm it can kill your scoby, so make sure it's room temperature.  Next, place the kombucha scoby and your starter tea (your culture will be floating in the starter tea when you receive it) in the tea (plastic may leach into tea so only use glass, although if you want to use plastic, make sure it's a food grade plastic with the number 1 or 2 on the bottom.)  Make sure there is 1"-2" of room at the top for the tea to "breathe" while brewing. Cover with a coffee filter, a piece of paper towel, or a thin cotton t-shirt  and secure with a rubber band (to keep fruit flies out) (cheese cloth should not be used, as it lets in fruit flies.) Place in a warm pantry or on counter (just not in direct sun) and do not disturb.  Disturbing it could cause the newly growing baby scoby on the top of the surface to sink, and if this happens the baby scoby will not grow into a thick scoby.  Start tasting after 6-7days (you can use a straw) and let it brew until your preferred taste. The longer you brew, the more vinegary it gets, and there is less sugar remaining in the tea.  When you see bubbles at the top of the liquid, it should be just right, nice and tart and sparkling. Ours takes about 6-9 days depending on the temperature, although it can take up to 10-14 days in cooler weather. In the warmer months it does not take as long. Some prefer even longer brewing times. Remove the mother scoby (mushroom) and the baby scoby (mushroom) (new mushroom) which may have attached itself to the first. Strain the tea using only plastic (not metal) strainers. Bottle and place in the fridge.  The cold slows down the fermentation.  Start all over again!

*If you want some natural carbonation, simply pour your finished tea into mason jars, leaving a few inches of space at the top.  Tighten the lid.  Let the tea sit 3 days before placing in the refrigerator.  Once you open the jar it will be a little fizzy.  Delicious!

*To decaffeinate=
most caffeine is released during the first 30 seconds after it boils.  In a small pan with a small amount of water, just enough for the tea bags to be saturated with water, boil the water with the tea in and after 30 seconds, quickly remove from heat and pour off the liquid.  Now put the tea bags into your boiling sugar water.  Supposedly this removes most of the caffeine, but does not remove the nutrients needed for your scoby to feed off. 

Quick Method: *If you have fresh, spring or filtered water, you can speed the cooling of the tea.  To do this, boil only half of your water with the sugar and tea.  Once the tea has cooled a little, pour the remaining half of water into the glass jar and pour the warm sugar tea in with it.  We recommend this only if your water has no chlorine in.  The chlorine can kill the scoby. 

How much to drink? Experts recommend starting with 2-4 ounces per day. Some people find this is enough, others drink several ounces per day. We drink it by the glassful, about a cup a day. K-tea is a diuretic so be sure and drink plenty of water as well if you are drinking it regularly.  Notice the health benefits and pass it on to friends and neighbors.

Storing extra scobys: Do not store extra scobys in the refrigerator.  Simply place your scoby in a glass jar with enough k-tea covering it.  From time to time pour a little sugar tea in.  Place in a pantry or cupboard away from direct sunlight. It's good to have a few on hand just in case your scoby goes bad from fruit flies or any bacteria that may have gotten in the tea. 

Reasearch on Kombucha's Benefits:
There has been great research done on the benefits of Kombucha. including some 300 books and research papers with a majority of the research conducted in Russia and Germany.   One of the most famous researchers was Dr. Rudolf Sklenar of Oberhessen who studied the benefits of the detoxifying properties of glucuronic acid found in Kombucha.  He had great success treating many ailment s including: arthritis, obesity, arteriosclerosis, constipation, improving the metabolism, treating impotence, rheumatism, gout, kidney stones and cancer, especially in its early stages, and invigorating the entire glandular system. 
The Japanese have also conducted great research one of which showed the role of polysaccharides found in kombucha and their positive effect on macrophages and T-cells. One study showed that the survival rate in cancer sufferers given polysaccharides was twice that of patients undergoing conventional treatment.

I believe one of the gifts we can give ourselves this year and for Valentine's Day is the gift of love. People are especially too hard on themselves.  We judge ourselves, compare ourselves to others, put ourselves down, speak of our imperfections as if they are obvious to others and criticize every foolish and unthinkable act. 

If we don't look like a sports model or movie actress, we think we are ugly.  Everyone is beautiful, no matter the size and length of your skinny or not so skinny legs.  We are all created in the image of God and God loves us.  If He can love us despite our imperfections, then how much more should we love ourselves?

Try going a day without the guilt of an imperfect diet.  If you think it will make you fat, it just might, but what if?  What if every time you ate something you didn't think was good for you, you just loved yourself?  If your body receives love, then maybe you will stop sabotaging it through unhealthy food......just a thought. 

Love heals. 
When we love ourselves, we can love others. 
Love is a step upwards.

You're not overweight; you're thirsty! Chronic dehydration may be causing you to hold on to those few extra pounds.  According to Dr. Fereydoon Batmanghelidj, author of  "Your Body's Many Cries for Water," chronic dehydration is often the cause of pain and disease.  

When an area in the body becomes dehydrated, histamines in that area increase, which results in pain.  When the body becomes fully hydrated, histamine levels subside and the pain is reduced and often elminated.
Dr.
Batmanghelidj says, "You're not sick; you're thirsty. Don't treat thirst with medication."  There is a strong correlation between the production of pain-causing histamines in the body when being dehydrated.
    
According to Japanese traditions and studies, water treatment has been noted to help a wide variety of health conditions such as overweight problems and obesity, asthma, migraines, headaches, arthritis, heartburn, ulcers, gastritis,  angina, hypertension,
body ache, back pain, colitis pain, chronic constipation, hiatal hernia, depression, chronic fatigue syndrome, fibromyalgia, high cholesterol, morning sickness, bronchitis, meningitis, diarrhea, diabetes, kidney and urine diseases, vomiting,  hemorrhoids,  all eye diseases, cancer, menstrual disorders, ear nose and throat diseases.

It looks like everything is on the list, right? But, according to
Dr. Batmanghelidj, dehydration can be a huge factor in these conditions and they can be reduced dramatically with water and often eliminated.

Our bodies are a large percentage of water:
Muscles are 75% water
Blood is 82% water
Lungs are 90% water
Brain is 76% water
Bones are 25% water


Most people think they are drinking enough water, but try this advice from Dr. B and see how your body responds. 
  • Drink 3-4 glasses (24-32oz) of water first thing in the morning on an empty stomach.  (My advice is to add a few squeezes of fresh lime or lemon for an alkalizing effect.)
  • Drinking room temperature water is best as cold water slows down digestion.
  • Wait 45 minutes after drinking the water to eat your first meal.
  • If you cannot drink 3-4 glasses of water at first, start with a smaller quantity and then work up to the 3-4 glasses.

    Livin' Slim Water Tips:
  • Drink water that is filtered to remove chlorine and harmful chemicals
  • Avoid plastic containers, as these bottles have chemicals in which can leach into your water and  disrupt your proper hormone function, which help with maintaining a proper weight. 
  • Drink in glass water bottles or glass canning jars
  • Wait at least 15 minutes after eating any meal or snack before drinking water or any liquids.  This will allow the natural digestive juices not to get diluted so they can do their best in helping with their role in the digestive process.
  • Bring water with you to work and when traveling.  Usually a trip to the store takes a good hour and that is too long to go without water.
  • Drink water even when you're not thirsty.  This is the first step in making sure you are not craving water, which means you have waited too long.

How much water should You drink a day?
    There are many charts and calculations on how much water you should be drinking, but in my opinion, they're all too complicated. 
    It really depends on what climate you live in, how many raw fruits and vegetables you're eating, what your activity level is and what your current weight is.  These are all determining factors with how much water you should be drinking.
    So if I were you, I would follow the tips above by saturating your blood, tissues, muscles, lungs and bones first thing in the morning.  After that, increase your total daily water to 1 1/2 times the normal amount that you regularly drink.  If you regularly drink 8 cups of water a day, try drinking 12 cups a day.  Watch and observe the pains in your body decrease and see if it helps you lose those extra pounds!  Drink away!

*If you have any kidney disease, it may be advisable to talk to your Dr. about increasing your water intake.

Help fight off colds, infections and even cavities by eating cranberries, which are loaded of vitamin C, vitamin A, B-carotene, lutein, zea-xanthin, and folate and minerals like potassium, and manganese.

Cranberries are also extremely high in antioxidants, being one of the highest in the category of edible berries. Eating high amounts of antioxidants helps to flush out toxins, thus helping with weight loss!

What else do cranberries offer?: 

  • Scientific studies have shown that eating cranberries have potential health benefits against cancer, aging and neurological diseases, diabetes, inflammation, and bacterial infections, due to their high amounts of flavonoid phytochemicals called pro-anthocyanidins.

Cranberry Apple Kale Salad
2.58 fat grams, 94 calories = 24% fat calories
Serves: 4

2 cups purple cabbage, chopped thin
1 cup kale, chopped and
1 red apple, sliced thin
1 green apple, sliced thin
1/2 cup celery, diced
1/2 cup cranberries
1/8 cup walnuts, chopped

Dressing: (entire dressing) 3.8 fat grams, 180 calories = 19% fat calories
1/2 cup low-fat plain soy yogurt
1 tbsp agave or 6 drops liquid stevia
1/2 tsp poppy seeds
1/2 tsp Real salt
1/2 tsp dry mustard

Mix the salad ingredients in a serving bowl.  In a small bowl, mix the dressing ingredients and stir well.  When you are ready to eat, pour the dressing over the salad mixture and stir until all ingredients are coated. 
Tip: For a hearty lunch, spoon the salad in whole grain pitas and enjoy!

What is fermented cabbage and what are probiotics?

 Green Sauerkraut
           (prep are 4 days before) Serves: 8

Raw Sauerkraut is a fermentation that converts starches into lactic and acetic acids. This process creates friendly intestinal bacteria and vitamin C. Raw sauerkraut is full of enzymes that help aid in the digestion process and also slows the growth of candida yeast, because of the high count of lactobacilli.

1 head cabbage, finely chopped
1 carrot, grated
1 garlic clove, minced
2 tbsp Real salt or kelp powder
1/ 2 tsp ground dill seeds (optional)

Finely chop cabbage. In a large crock-pot, mix cabbage, carrot, garlic clove, salt, and ground dill seeds.  Cover with outer leftover cabbage leaves. Place a large plate on top with a heavy weight to push it down, the heavier, the better; cover with lid. Leave for 3-5 days at room temperature or until it is sour enough for your taste. Fermentation varies on room temperature. It may spoil if left too long. Once fermented , place in the refrigerator covered. It will keep for 2-3 weeks if refrigerated.

Garbanzo beans, also called 'chickpeas', are full of fiber, protein, vitamins and minerals.  What may be delicious, may also be rewarding to your health! 
Because of their richness of both soluble and insoluble fiber, if eaten daily, garbanzo beans may reduce bad cholesterol in your blood and promote weight loss.  Diets high in fiber reduces blood pressure, lowers low-density lipoprotein, or LDL, cholesterol levels, reduces diabetes and eases inflammation.

Chickpeas and Weight Loss: In the "Journal of Medicinal Food" according to a study, it stated that people who ate legumes like chickpeas daily, lost an average of 8 lbs. over an eight week period compared to people who simply cut calories.  Anyone wanting to lose weight must eat a high fiber diet, 25-35 grams or more a day. Fiber distends your stomach, making you feel satiated for longer periods and the roughage helps to pull 'waste' and fat from the intestines.

Garbanzo Sandwich Spread

Serves: 6

1 15 oz can garbanzo beans, drained
8 large fresh basil leaves, chopped
1/4 cup red onion, diced
1/2 cup dill pickles, diced
1/2 cup celery, diced
1/4 cup red bell pepper, diced
1 tsp mustard
1 tbsp vegenaise or substitute
McCormick Salad Supreme seasoning
Herbamare Seasoning
Redmond Natural Garlic Salt

1 tomato
alfalfa sprouts or romaine lettuce
6 whole grain pita pockets halves

Drain the garbanzo beans and mash them in a bowl with a fork or pulse them in a food processor until they are chunky.  Add the basil leaves, onion, pickles celery, bell pepper, mustard, vegenaise and stir.  Add the seasonings to taste, and stir.  Below is a picture of the seasonings I like, but you can add your own.  Eat in whole grain pitas, rolls or bread, with my favorite being the pita pockets.  Spread into the pockets and top with alfalfa sprouts and tomatoes.  Try different varieties of this sandwich by changing the seasonings, vegetables and breads used!  If you have picky kids, make theirs separate and let them choose what veggies they want on theirs. 

*If you want to lower this fat calorie even more for a more successful weigh loss, leave out the vegenaise.

Did you know that potatoes actually curb your appetite and help with weight loss? They have been proven to increase CCK levels, satisfying your brain and controlling your emotional and mental cravings!  Wow!  So despite what the rest of the world is saying about potatoes, they are excellent with weight loss and have an extremely low fat calorie percentage at .008%.  So eat lots of potatoes and watch the pounds melt off, without the butter and oil, of course!

I promise you'll love these potato Fries! They are so simple and easy to make.
All you need are potatoes, sea salt and your favorite seasoned salt.

Potato Fries
.2 fat grams, 220 calories = .008 fat grams
Serves 4

4 large russet or red potatoes
Real Sea Salt
Seasoned Salt

Cut the washed potatoes into your desired french fry size pieces.  Lightly spray a cookie sheet with non-stick spray.  Spread the potatoes on the cookie sheet and sprinkle sea salt and seasoned salt on.  Place in a heated 375 degree oven and bake 40 minutes or longer.

Protein diets have been on the rise with the latest and most popular, the 'Paleo Diet' which is a no-carbohydrate diet focusing on animal-derived foods.   A similar diet is the Atkins which focus is eating large amounts of proteins from meats and dairy with few carbohydrates.  But are these protein diets safe?  After all, protein in meat form, has the highest amounts of cholesterol, saturated fat and is extremely acidic.  On top of this are the high amounts of synthetic chemicals, growth bovine hormone, antibiotics and who knows what. 

Just because people lose weight on these protein diets does not mean they are safe.  One can go on chemotherapy and lose weight, but that doesn't mean it is healthy.  The Paleo and Atkins diet works by starving the body of carbohydrates in order to induce a state of illness (ketosis), which can result in weight loss. People eventually become too sick to eat too much.

Dr. John McDougall a medical Dr. says, “Americans consume 6 to 10 times as much protein as they need. All that excess protein overworks the liver and kidneys causing both to become enlarged and injured. Excess protein consumption also causes the kidneys to pull large quantities of calcium from the body, causing bones to weaken and kidney stones to form."  So eating too much protein is hard on the liver, kidneys, and actually causes a calcium loss, which can lead to osteoporosis.

Many of the amino acids from animal proteins contain sulfa, which is toxic to the liver and kidneys. In fact, Dr. McDougall says the best way to heal the kidneys and liver is to eat a low-protein diet, especially low in animal proteins, and according to scientific research, we only need about 20-30 grams of protein. 

Meats are extremely acidic to the body, resulting in an acidic pH levels.  Even a slight pH imbalance can make you feel tired, cause you to gain weight, give you trouble digesting food, and create aches and pains in your body. If your pH fluids are acidic, your body will do everything to maintain the proper pH, even stealing the calcium and minerals from your bones, resulting in weak bones.    

Remember, the only healthy weight loss solution is one you can live for the rest of your life and be healthy.  You might lose weigh on a protein diet, but what about high cholesterol levels, heart disease and other forms of atherosclerosis? 

Protein diets are based on artery-clogging saturated fats and cholesterol, and bone-damaging, acidic proteins from animal foods.
Researchers have found that the modern-day hunter-gather populations such as the Inuits (Eskimos) who base their diets on meat and fish, suffer from osteoporosis, heart disease and other forms of atherosclerosis.  Modern-day hunter-gathers who base their diets on plant foods (starches) are free of these diseases.

Eating starches, fruits, vegetables and plants is the only healthy long term solution for losing weight!  Eat up!

5 Easy Steps for Growing Ginger as a House Plant!
Growing ginger is fun, easy and rewarding.  All you need is a pot or a bucket and some good soil.  Make sure the pot is about 12" wide and 8"-12" deep. 

1.  Fill the bottom of the pot with 1 inch of small rocks or pebbles. 

2. Cover the rocks
with equal parts of organic soil and organic potting soil. 

3. Place a small ginger root from the grocery store in the dirt and cover with a 1/2"-1" of soil. 

4.  Water it and keep it in a sunny location.  They love humidity and moisture, but don't like to we waterlogged, so make sure you don't over water. 

5.  If you bring your pot outdoors, make sure to bring them in at nights when the temperatures get below 59 degrees F.

Mix all ingredients in a bowl.  Serve with baked chips, crispbread or corn meal chips.
Note: You can use this recipe for canning salsa, although I leave the cilantro out.  For canning, cook the salsa in a large pot for one hour before bottling.  Then boil in a water bath for 40 minutes dependng on altitude.

If you're like me, you love salads, but finding an easy, delicious, healthy salad dressing is the difficult part!  Try my quick and easy dressing made in less than a minute!  All you need are 3 simple ingredients. 





Balsamic Italian Dressing
0% fat calories

1 pouch of Good Seasons Italian Salad Dressing Mix (don't use fat-free, it's not as good)
1/4 cup balsamic vinegar
1/4 cup water

Simply combine the ingredients in a jar, cover with a lid and shake!  If you like a stronger balsamic taste, simply add a little more balsamic vinegar to your dressing. 

Here is a delicious salad recipe and goes great with this dressing.


Garden Delicious
3.15 fat grams, 98 calories = 28% fat calories
Serves: 4

4 cups mixed greens, packed
1 cup cauliflower, florets cut small
1/2 cup red onion, chopped
1 tomato, sliced

1 cup soy milk
4-6 ice cubes
6-8 drops of liquid stevia

Blend the ingredients in a blender until smooth.  You can't even taste the cayenne pepper in this smoothie and it is quite delicious! 
Note: If you want an even lower fat calorie percentage, replace the soy milk with water and/or add 1/4 cup of cooked brown rice, adding water to thin it down.

Flax seed is known for its rich omega qualities and other nutritional benefits, making it a daily 'must have' food in your diet!  The seeds are an excellent source of health benefiting nutrients, fiber, minerals, vitamins and antioxidants that are essential for healthy living.  Its delicious 'nutty' flavor makes it easy to add to smoothies, muffins, cakes, pancakes, breads, cookies and pastries! 

Here are some of the health benefits of flax:

  • Flax seed is rich in minerals like manganese, potassium, calcium, iron, magnesium, zinc and selenium. 
  • Flax seed is one of the top vegetable sources of omega-3 essential fatty acids such as alpha-linolenic acid (ALA), linoleic acid, and arachidonic acids.  It is also rich in monounsaturated fatty acids like oleic acid.  These fatty acids have anti-inflammatory properties which help lower the risk of blood pressure, strokes, coronary artery disease and breast, colon and prostate cancers.  Infant development and maturation of the nervous system requires adequate amounts of omega 3 fatty acids
  • The phytoestrogens and lignans in flax seeds have antioxidant and cancer properties.  
  • Flax seed is an excellent source of vitamin E and contains about 133% of the daily recommended values at 20 grams per 100 grams.  Vitamin E helps maintain the integrity of cell and mucous membranes and the skin by protecting it from harmful oxygen-free radicals. 
  • Regular intake of small daily portions of flax seeds helps lower LDL or “bad cholesterol” and increases HDL or “good cholesterol” levels in the blood.
  • Flax seeds are packed with important B-complex vitamins such as riboflavin, niacin, thiamin, pantothenic acid, vitamin B-6, and folates. Thiamin is essential for carbohydrate metabolism and helps prevent beri-beri disease. Folates help prevent defects in the fetus when consumed during pre-conception period and pregnancy.

Try these delicious carrot muffins made with flax seed, whole wheat flour, applesauce and agave!  Don't let the healthiness fool you, for you'll love the taste of these muffins and you can eat more than a few with their low fat calorie percentage!  This recipe and others made with flax and whole grains is found in my Livin' Slim Healthy Dessert Recipes!
Carrot Muffins
1.05 fat grams, 90 calories = 10% fat calories
Makes 16-20 muffins / 2 loaf pans.

1 cup unsweetened applesauce
3/4 cups sugar or 1/2 cup agave
2 cups carrots, shredded
                                          1 tsp cinnamon
                                          1/4 tsp nutmeg
                                          1/4 tsp ground cloves
                                          1/4 tsp ginger
                                          2 tsp baking powder
                                          1 tsp baking soda
                                          1 tsp Real salt
                                          4 tbsp ground flax seed
                                          1 tsp vanilla extract
                                          3/4 cup water
                                          1 3/4 cups whole wheat flour
                                          Option: 1/3 cup chopped walnuts (2.7 fat grams,100 calories=24% fat calories)

Preheat oven to 350°.  In a large mixing bowl, combine the applesauce, sugar, carrots, spices, baking powder, baking soda, salt, ground flax seed, vanilla and water.  Mix.  Slowly stir in the flour until it is lightly mixed.  Do not over mix.  Mixture will be thick.  Spoon into sprayed muffin liners or cupseez, filling 2/3 - 3/4 full, and bake for 20-25 minutes. 
To make carrot bread, simply spray 2 medium size loaf pans with a non-stick spray, and fill.  Bake for 35-45 minutes or until a toothpick comes out clean.

Black Bean Soup
1.1 fat grams, 150 calories = 6% fat calories
Serves: 4

1/2 medium onion, diced
2 medium carrots, chopped
2 celery stalks, diced
1/2 poblano pepper, diced
1 garlic clove, minced
1 cup black beans, rinsed
                                                                   1 15-ounce can diced tomatoes
                                                                   1 bay leaf
                                                                   3 tsp cumin
                                                                   1/2 tsp thyme
                                                                   1/8 tsp cayenne pepper (or sprinkle in individual bowls)
                                                                   4 cups water
                                                                   1 tsp Real salt
                                                                   1 1/2 tsp vegetable or chicken bouillon
                                                                   1 tsp tomato bouillon

Crock Pot Method: Put all ingredients in a crock pot.  Cook for 5-6 hours on high, or 6-8 hours on low.

Stove Top: Substitute one 15-ounce can of black beans, drained and rinsed, and place all the ingredients in a medium size pot, simmering on medium high until all the vegetables are cooked, about 15 minutes.  Take out the bay leaf before serving.

Try this delicious low fat calorie blueberry yogurt made from fresh blueberries, bananas, silken tofu and agave!  Eating yogurt made from dairy is not only full of cholesterol, but it is extremely mucous forming.  There are definitely a lot more alternatives than eating yogurt made from dairy milk. 

Blueberries and weight loss?  Catechins which are found in blueberries actually activate fat burning genes particularly in the belly and abdominal area.  Regularly eating these catechins, according to Tufts University, increases abdominal fat loss by 77% and double total weight loss!

This blueberry yogurt is full of antioxidants coming from the blueberries which help the eyes in many ways.  Blueberries can improve nighttime vision, promote quicker adjustment to darkness and promote faster restoration of visual clarity after exposure to glare.

Blueberry Banana Yogurt

Serves: 1 

1 banana
1/4 cup blueberries, fresh or frozen
1/2 cup silken tofu
4-8 drops liquid stevia or 1 tsp agave

Blend the ingredients in a blender until smooth.  Pour in a chilled container and serve with a few blueberries on top!

Blend in a blender until smooth and freeze in a small container or popsicle container until frozen.

Want to lose weight and lower cholesterol at the same time?  Try making this delicious Edamame Corn Salad which is packed with fiber, vitamins, minerals and is low in fat calories.  This is easy to make and can be made in 5-10 minutes!  What's great about this salad is you can easily turn it into a delicious energetic meal by wrapping it in warmed corn tortillas and drizzling some of my Sante Fe Baja Dressing! 

What's great about this salad?  Edamame, or soybeans,
are a powerhouse of nutrition. Except for vitamin D, Edamame has at least 6 percent of the recommended daily intake of all nutrients. You'll also be eating a high amount of plant protein, fiber, iron, magnesium, manganese, phosphorus, thiamin, folate and vitamin K.  Edamame are an especially great source of folate, providing 120 percent of the recommended daily intake. (Folate prevents birth defects through its role in the creation and growth of new cells).

Edamame
also helps lower the risk of cardiovascular disease and reduces cholesterol, because of their plant-based chemicals called isoflavones that are similar to estrogen. These phytoestrogens help lower cholesterol and help reduce the frequency and severity of hot flashes. Phytoestrogens attach to the special receptor cells, similar to estrogen, but they’re weaker than real estrogen.  Estrogen is involved in breast, uterine and prostate cancer, so lower levels of estrogen from eating soy isoflavones may lower your risk of developing estrogen-sensitive cancers.

Healthy Fats! The polyunsaturated fats in soybean oil include omega-3 fatty acids which are heart healthy and reduce inflammation and lower the risk of cardiovascular disease.  What great reasons to include a little bit of edamame in your diet! 

Edamame Corn Salad
1.77 fat grams, 118 calories = 13% fat calories
Serves: 4 (1 cup servings)

2 cup frozen corn, thawed
1 cup frozen edamame shelled, thawed
1 tomato chopped
1/3 cup green bell peppers, chopped
¼ cup green onion, diced
1 garlic clove minced
1 juice from lemon
½ tsp seasoned salt, spike, herbamare, etc.
Real salt to taste
pepper to taste
Option: 1/2 cup fresh cilantro, chopped

Mix all ingredients in a bowl and season to taste.  You can eat this as a side dish or make it a meal by wrapping in whole grain tortillas or corn tortillas, throwing in some lettuce and drizzling my Sante Fe Baja Dressing which is low in fat calories.

Creating a delicious, filling, nutritious meal can be a little tricky and frustrating, especially if you are trying to lose weight!  Try this delicious split pea soup that will give you plenty of energy, nutrition, fiber and protein with a low fat calorie percentage of only 1%.  Eat this with warm whole grain french bread or carrot muffins for an easy quick meal your whole family will love!  If you are busy like most people, start this in your crock-pot in the morning which will free up some of your evening for more time and fun!

Split Pea Soup
.40 fat grams, 185 calories = 1% fat calories
Serves: 4

1 1/3 cups dried split peas
4 cups water
1 bay leaf
1/2 tsp celery seed
2 tsp parsley
1/2 tsp basil
1/2 tsp paprika
1/2 onion, chopped
1-2 garlic cloves, minced
2 tbsp vegetable or chicken bouillon
1 celery stalk, diced
1/2 tsp Real salt
2 carrots, cubed
1 medium potato, cubed

Stove-top: In a large pot, combine peas, water, bay leaf, celery seed, parsley, basil, paprika, onion, garlic cloves and bouillon.  Bring to a boil; turn down heat to low; cover and simmer on low heat for about 1 hour;  add the celery, carrots, potato and salt and cook until tender.  Add a little water if necessary. Remove the bay leaf before serving.  Serve with Carrot Muffins or whole wheat french bread.

Crock-pot: Place ingredients (except for the celery, carrots and potato) in a crock-pot and cook on low for 7-10 hours or on high for 5-7 hours, adding the celery, carrots and potato half-way through the cooking time.  Remove the bay leaf before serving. 

Tip:  If you have picky kids like mine who don't like onions, simply place the entire onion if doubling this recipe!  If you are using only half of the onion, place the onion in a food safe netting bag and remove before serving.
